We made this sparkler in the French 'methode champenoise' style. Aged for four years in our cellar, it is bone dry, as the natural fruit of the Chardonnay grape renders a dash of sweetness. Add a steely earthy middle, it finishes with a hint of nuts. You would be wise to buy a few extra bottles as it will last another five years.
